White Chocolate Chip Cinnamon Oatmeal Cookies

I am a sucker for cookies...oh who am I kidding? I am a sucker for all things sweet! I decided to make these because I had all the ingredients and wanted to try something new. Although the original recipe called for chopped pecans (which I followed), I did not particularly care for them in the recipe so I made them optional here. I am not a fan of nuts in my dessert, but macadamia nuts are an exception! Enjoy the recipe!
Yields: 3 dozen cookies
Ingredients:
1/2 cup unsalted butter, room temperature
1/2 cup light brown sugar
1/2 cup white sugar
1 egg
1 tsp. vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. ground cinnamon, optional
1/2 tsp. salt
3/4 cups rolled oats
1 cup white chocolate chips
1/2 cup chopped nuts of your choice, optional

Directions:
1. Preheat oven to 350 degrees F. Line a cookie sheet with a silpat mat or parchment paper.

2. In a medium bowl, cream together the butter, brown sugar, and white sugar until smooth.
Mix in the egg and vanilla.
Add the flour, baking powder, baking soda, cinnamon, and salt to the creamed mixture. Mix just until incorporated.
3. Stir in the rolled oats, white chocolate chips, and nuts, making sure they are evenly distributed. Drop tablespoonfuls  2 inches apart from the next onto the prepared cookie sheet. I tend to just eyeball and roll the dough in my hand a little before placing them and flattening them a little.
4. Bake for 10 - 12 minutes in the preheated oven. Remove from baking sheet to cool on wire racks.
