Fried Rice

One of the best ways to use leftover rice is to make fried rice with it! Leftover rice is perfect because it tends to be drier. If you are in the mood for fried rice, but do not have any leftovers, just make rice with a little less water than normal for a firmer and drier rice to work with! The best thing about fried rice is you can put anything you want in it! I like using some frozen vegetables, spam, lap xuong (Chinese sausage), garlic, and scrambled eggs. I start off by running the frozen veggies under some water and dry them well. In the meantime, heat up a skillet with some oil and cook the spam and lap xuong on medium-low heat. Afterwards, I let them drain on a paper towel. Eggs are cooked in the same oil. Once the meat is cool enough, chop them up into small pieces and do the same to the eggs. Put some oil in a wok and cook the garlic on medium until fragrant, then add the veggies and rice and cook until warmed through. I added all the meat and eggs after. Flavor the fried rice with soy sauce, salt, pepper, and a little sugar to taste. Yummy!
