I had to try this out to see how Brussels sprouts would taste fried!
Yields: 2 -4 servings
Ingredients:
1 lb. Brussels sprouts
1 shallot, thinly sliced
2-3 tbsp. flour
Salt and pepper, to taste
Vegetable oil for frying
Squeeze of lemon juice, optional
Directions:
1. Clean the Brussels sprouts and thoroughly dry them. Trim the stems and cut them in half, lengthwise. If the Brussels sprouts are big, quarter them. (I would do this way ahead of time before cooking to allow it to dry.)
2. Add enough oil to a large pot to fill it up at least 1/3 - 1/2 of the way. Heat on the stove until it reaches 375 degrees F (a candy thermometer would be useful here).
3. In a medium bowl, combine the Brussels sprouts and shallot. Add flour and evenly coat the mixture.
4. Once the oil reaches 375 degrees F, carefully fry the Brussels sprouts and shallots until golden brown, about 3-4 minutes. It is helpful to cover the pot with a lid once adding the mixture to prevent oil from flying everywhere and hitting you. Scoop out with a slotted spoon and immediately season with salt and pepper. For a hint of freshness, squeeze a bit of lemon juice on top before serving!
